Sadly, that conversation will never happen in my household. I have yet to convince my new wife that mushrooms are a good thing to eat…
actually, mushrooms are low in Saturated Fat and Sodium, and very low in Cholesterol. They are also a good source of Protein, Folate, Magnesium and Zinc, and a very good source of Dietary Fiber, Thiamin, Riboflavin, Niacin, Pantothenic Acid, Phosphorus, Potassium, Copper and Selenium.

You know, I studied mushroom identification for a whole semester, but I never knew this. As far as nutrients, I think Mg is the main one…
