Oysters galore

One of my favorite places around here is a seafood shop called Clayton’s. They have fresh local fish of every kind (if you’re a seafood lover and have never tried pompano, you’re missing out terribly), and they’re famous for their live blue crabs, which people take home by the grocery bag full. They even offer beer on tap that you can drink while you wait for your fish to be cleaned or your crabs to be steamed. Today they had the most amazing deal on fresh oysters: $23 for half a bushel.

It’s about seven dozen oysters. While I’ve been busy shucking and eating, I’m clearly going to need some recipes. Anyone have any favorites they’d like to share?

    The best oysters I’ve had were in Kinsale in Ireland. Served on ice, with Tabasco sauce (unusual for Ireland) and lemon wedges on the side. And lots of Guinness.
